Sip & Savour: Kyoto

Article by

Kyoto, part of Japan’s iconic Golden Route, is a city of deep tradition and quiet revelation. Culinary culture flows through the city, from discreet family-run establishments to multi-course kaiseki, and it’s here that you can see, touch, smell, and taste centuries of Japanese heritage.

From discreet family-run establishments to the rarefied art of multi-course kaiseki, Kyoto’s culinary culture remains profoundly connected to season, place and philosophy. Take the time to linger a little longer and experience everything the city has to offer.

Seasonal Masters

From tatami-lined dining rooms to multi-course masterpieces, these are the places where every flavour, texture, and gesture reflects generations of culinary wisdom.

Kikunoi Honten

There are few restaurants that truly match precision with the poetry of haute cuisine, but this three-Michelin-star kaiseki restaurant is a seasonal delight that does both with effortless beauty.

The ability of Chef Yoshihiro Murata to create culinary art is equaled only by the setting, where you enjoy each presentation in private tatami rooms overlooking manicured gardens. Each course is designed to flow with the seasons, harmonising textures and flavours gathered from all around Kyoto.

Hyotei

Hidden near the serene Nanzenji Temple sits Hyotei, a three-star Michelin oasis known for executing luxury dishes that border on sheer perfection.

What started as a tea house over 400 years ago, Hytoei has continued the philosophy of a graceful bygone era, and dining here feels like stepping back in time to a slower, more peaceful time. The restaurant values subtlety and restraint while paying homage to traditional, local cuisine through their famous Hytoei Tamago, a soft-boiled egg dish, and Asaguyu, a summer porridge.

Dining at Hytoei is an experience unlike any other and something of a pilgrimage for those who want to experience the perfect execution of seemingly simple elements.

The Inner Circle

Step inside Kyoto’s most exclusive restaurants, where the boundaries between chef and guest dissolve. With just a handful of seats and a reverence for nature and season, these are meals that speak to the soul.

Sojiki Nakahigashi

If you’re looking for something uniquely local to Kyoto, Sojiki Nakahigashi might be the purest form of terroir exploration.

Chef Hisao Nakahigashi personally forages ingredients from the surrounding mountains, rivers and woodlands around Kyoto, enriching the foundation of every dish with the very essence of the area.

With nature taking centre stage, every bite tells a story and takes diners on both a culinary and emotional journey that reveals a deep intimacy with the landscape.

Mizai

Exclusive and intimate, Mizai offers one of Japan’s most unique culinary experiences. With less than ten seats in the entire restaurant, diners are taken through a daily menu by Chef Hitoshi Ishihara.

The deliberate pacing and pristine presentation allow diners to almost meditate their way through dishes that are created to evoke the very essence of Kyoto's microseasons. Each dish is designed not only for flavour but to capture that specific moment in time.

While it might be cliché in some places, dining at Mizai, where the boundary between chef and guest dissolves into nothing, can be described as a spiritual practice that transcends the normal restaurant experience.

Quiet Discoveries

Away from the spotlight, Kyoto’s lesser-known gems reveal the true heart of the city’s food culture. Expect sincerity, simplicity, and surprising depth in these deeply personal, season-led menus.

Gion Sasaki

A kaiseki is something of a feast, with multiple dishes served through a variety of techniques and skills. But not every kaiseki is an experience that unfolds like the one Chef Hiroshi Sasaki is known for.

Theatrical presentations and unexpected flourishes are mixed perfectly with a reverence for tradition to create a unique dining experience that embodies the exuberant spirit of Kyoto. Diners are treated to old favourites reimagined with global influences from beyond Japan’s borders, creating a vibrant but still traditional kaiseki.

Delivered with both warmth and wit, it is as much a performance as it is a culinary feast with tradition and innovation at the forefront.

Isshisoden Nakamura

For over six generations, the Nakamura family has quietly perfected the subtle art of kyo-ryori, Kyoto's distinctive regional cuisine, creating an institution of Kyoto’s culinary heritage.

Dining at Isshisoden Nakamura is like taking part in a culinary legacy where dishes, refined over decades, are prepared with measured grace and attentiveness to the seasonal proclivities. The atmosphere, while heavy with the weight of the restaurant’s history, is vibrant and alive as the heirloom recipes express the full depth of culinary knowledge to present Kyoto’s cuisine in its most dignified form.

Kitcho Arashiyama Honten

Set alongside the Katsura River in Arashiyama, the original flagship of the famed Kitcho group is a dining experience that can only be compared to a theatrical performance.

Founded by legendary chef Teiichi Yuki, Kitcho is a place where Kyoto’s culinary tradition meets full-blown artistry as the restaurant pairs multi-course dining with an orchestrated performance with everything from handmade ceramics to precisely arranged flowers.

The procession of dishes unfolds against a backdrop of manicured gardens and seasonal landscapes that change like the acts in a play, contributing to the composition of each plate and creating the epitome of kaiseki luxury and theatre.

Kichisen

Honouring the past but embracing the future, Chef Yoshimi Tanigawa of Kichisen achieves the difficult task of blending traditional kaiseki with contemporary, modern techniques that pay homage to the roots of Kyoto’s culinary traditions.

This unique approach, coupled with a serene atmosphere and exceptional service, creates a dining experience that shows off both culinary innovation and cultural continuity. The dialogue between the past and the present results in a sophisticated yet accessible kaiseki.

Hidden Gems

Tenjaku

Tenjaku, found in the traditional textile district of Nishiin, offers up an elevated culinary masterpiece unlike anything else in Kyoto. Chef Ryo Nishioka transforms the humble tempura into sculptural art, with each piece emerging with an impossibly light batter and cooked to perfection.

As each course continues the exploration of texture and seasonal flavour, rare Chinese teas cleanse and rejuvenate the palate, layering the crisp tempura with the depth of Kyoto’s culinary heritage.

Matsukawa

A hidden gem deep in the abundant Kyoto food scene, loved by knowledgeable locals and discerning travellers, Matsukawa combines impeccable, local ingredients with refined technique and genuine hospitality to create an intimate and understated dining experience.

As devoted food lovers whisper about the ever-changing seasonal menu that allows each ingredient to shine, it is the simplicity and authenticity that keeps diners coming back time and again.

While a lesser-known restaurant, Matsukawa creates memorable meals in the most unassuming of ways, without fanfare or pretense.

Embrace Every Sense

While enjoying the culinary delights of Kyoto’s most famous kitchens, take the chance to embrace every sense at Six Senses Kyoto.

Located in the historic Higashiyama district, this luxury sanctuary offers a blend of contemporary design with traditional aesthetics, with rooms overlooking tranquil gardens and temple rooftops.

Six Senses Kyoto is the perfect base for gastronomic exploration, offering a restorative respite between culinary experiences.

A Destination Like No Other

Kyoto’s cuisine is a melting pot of tradition and innovation, embracing both to create exceptional dining experiences that few destinations can rival. Every table offers a front-row seat to seasonal cooking, creating a connection to both time and place that anchors and delights.
